When and why did you start your minimalist journey?

I began my journey towards minimalism in 2006 after being diagnosed with Polycystic Ovarian Syndrome (PCOS).   I was told that it would be very difficult to get pregnant, I would have to take a few prescription medications every day for the rest of my life, and there was no cure.  I was devastated and felt completely hopeless! There was something in me though that knew there had to be some way of healing my body.  I could not accept what the doctors were telling me. 

After doing my own research for a few years, I learned about the benefits of eating a plant-based diet especially for women with reproductive health issues such as PCOS.  I changed my diet, gradually eliminating refined sugar, meat, and over time I was able to see very noticeable changes.  By going back to the basics and learning how to make food my medicine, the results I saw were amazing.   My husband and I conceived naturally in 2016 and had a healthy baby boy on June 2, 2017.
